Here's a shot of our yearly tradition, originally talked about in this post. We've traded off filling this box of See's candy since 2005! The mr. took the turn this year. And even though you are expecting it; it still feels special.

We are out the door for our weekend outdoor adventure... but I wanted to be sure to show you two easy valentine crafts you could whip up in no time!

Using old book pages, or scrap book paper of your choice either punch or cut out heart shapes. Simply double up the hearts and feed them through your sewing machine to your desired length! If you don't have a sewing machine, don't worry, just glue the string in between your two stacked hearts.

Using inspiration from family chic and a photo I found on Pinterest, I set out to the hardware store to find the materials they suggested. I wasn't impressed with the reinforced clothesline so I used some old floral wire I had at the house and wrapped it with yarn of my choice. Super simple, and really cute!

heart ruffle wreath {tutorial}

I used this tutorial to make the ruffle wreath seen below. Nice and simple, made from white sheets I bought at a thrift store.

Then a year later I repurposed the wreath for Christmas with a little upcyled ribbon. But I noticed a lot of the pins were coming out and causing the wreath to "thin".

When I sought out to make the heart ruffle wreath I vowed to skip the tedious pins and go straight to the hot glue gun... genius!

I started out with a straw heart wreath frame because I found it at a thrift store, but I am sure you could use a styrofoam one as well. Next step, cut out about a bazillion circles in the fabric of your choice. I used old t-shirts, and as you can see they weren't all the same shade of red. That doesn't matter as long as you mix the shades up so they aren't concentrated in one area of the wreath.

Fold your circle in half as seen here.

And in half again.

Take your 1/4 folded circle and hot glue it to the wreath. Continue this step until your wreath has reached your desired thickness.

Because the circle cutting is time consuming, I opted not to continue the ruffles around the back side of the wreath. I instead covered the back with a strip of fabric in the same t-shirt material.

Woo hoo its a harry potter themed baby shower! I was honored when asked to help out with decorations for a coworkers baby shower. Keep in mind, I've never read the books and can barely stay awake during the movies (sorry mrs. rowling and, weird your initials are the same as my hubby and I, jkr). Huge props to pinterest for the ideas!!

It wouldn't be a baby shower without a diaper cake!

Interestingly enough I did most of the decoration "shopping" in my own home. Who knew I had so many potterish items? Everything else was either upcycled or purchased at a thrift store. I was super stoked when I found the flying broom at my favorite thrift store ($4 score!). And when the mr. was trimming the trees in the backyard I snatched them up before he could use them for kindling. Also big thanks to the friend who let me borrow the very popular owl.

Its continuing to be a busy month for us! The porch is a little light on creativeness but 1. its decorated and 2. for cheap! The only item I purchase was the poinsettia, everything else was owned or upcycled.

And yes, that is the same wreath I made for our wedding. I just removed the burlap bow and added a holiday themed one.

And the best part of this post today is my craft FAIL! I thought I could pull off a hybrid of these two pins.

I have about 5 uncompleted projects in the craft room and just as many back logged posts for this blog. I'm about to take the easy way out and up date you all at once...here's what the mr. and I have been up to this fall.

I accepted a promotion, which meant leaving views like this...

then headed off to Yosemite for our anniversary get away...

as well as enjoyed a slice of our wedding cake, 1 year later. Nice wrap job mom, it tasted great!

This is not my recipe. but I made them. and they are good! There are a lot of really beneficial ingredients in this recipe and although there may be a ton of steps I promise it's worth it. Another added benefit is they freeze well, so enjoy all that hard work over and over again.

{sweet potato black bean burger}

ingredients
15oz black beans, drained and rinsed
3 cup cubed sweet tater, cooked and skin on
1/2 cup corn
2/3 cup finely chopped onion
2 large garlic cloves, finely minced
1/2 cup cooked quinoa
6 tablespoons rolled oats, partially ground
2 tablespoons sunflower seeds
1/2 teaspoon salt
black pepper
1 teaspoon cumin
1 teaspoon oregano
1/4 teaspoon coriander
1 teaspoon chili powder
1/4 teaspoon cayenne
1 tablespoon olive oil

steps
1. preheat oven to 375 once you finish cooking the quinoa and potato
2. mash half of the beans in a bowl until paste-like
3. add in the rest of the beans and give a very light stir/mash to combine
4. in a large bowl, mash the sweet tater. Each cube should be mashed, but you don’t want it creamy
5. stir in the salt, pepper, oregano, coriander, chili powder, cayenne and olive oil, until combined
6. mix in the onion, garlic, corn, black beans, quinoa, sunflower seeds, and ground oats, until just combined
7. form into balls, between your hands and flatten into 1/2”-3/4” thick patties. This should make 8 patties
8. Place on a pan lined with parchment paper [or lightly greased pan] and bake on each side for 15min, flipping once, half-way through

tips
To make the ground oats – Pulse your blender on and off, until you have the consistency about half way to flour. Instead of ground oats, feel free to sub – millet flour, oat flour, quinoa flour, whole wheat flour, etc.

I have another decorated front porch for ya'all. If fact this has become my recent obsession and I already have the "fall" porch supplies ready to go when halloween is over. In true diy fashion there were a few other crafts I wanted to add to this themed porch, but no time to do them!

Here we have the upcycled rag wreath. I really enjoy making these as you can see this in my second one; my first was the valentines version.

This time I used my husbands old black jersey t-shirts and black cotton pants, cut into strips. Score! No trip to the fabric store; only to Michaels for the box wire wreath frame.

The craft pumpkins were also upcyled. I rescued them from a thrift store pile, sprayed them, and then used acrylic paint to decorate.

This lantern and the chandelier you see in the other photo were decorations from our wedding. Love that I get to reuse them all year long! {Steamer trunk was free in the alley, see this post}

And my favorite craft for this themed porch... the upcylced pennant flag banner! Again I used old clothing, hemp twine and the zig zag setting on my sewing to create this customizable banner.

1. To start be sure to get the Honey Maid Fresh Stacks! They are wrapped in smaller packages and it will save you the hassle of breaking the bars in two.

2. Next up you need your marshmallow ghosts made by Peeps.

3. Lastly don't forget those mini Hershey's bars.

4. Place them in your cellophane bag like so.

And there you go, a cute spooky treat with a creative twist. Trust me the reaction is worth the effort, I was even asked if I made the marshmallow ghost! uh no.

p.s. Target was my one stop shop for the ingredients in this post, including the polka dot cellophane bags. The ribbon was however upcycled.

Once in awhile I think I will do these posts on things I buy regularly only because I know a good recommendation is always appreciated!

Oh blogging how I miss thee. Started a new job, had a quick visit to Las Vegas, and took a vacation to Yosemite all within the last 3 weeks! I'm looking forward to catching up on housework and crafts this weekend as well as celebrating my 1 year wedding anniversary.

I did however manage to whip together this neat wrapped gift... it all starting with the Pinterest inspiration photo you see below.

Originally I planned to punch out my own flowers from scrapbook paper but then I realized my mom sent me a book of pre punched flowers by K&Company.

So I popped out the pre punched flowers and ran them through my sewing machine to create a paper flower garland like you see in the inspiration photo.

The finishing touch was a card I had in my collection and a mini clothespin.

p.s. yes, I will accept praise for actually completing a Pin.

This is a lesson on what you can do with free crap!

{round 1} the alley chair. My mom and I were on a week long thrift store, swap meet shopping spree. We stopped by a local reclaimed furniture shop only to be disappointed with their lack of stock in the storefront. On our exit down the nearby alley, I made an abrupt stop. My mom, very confused, asked what I was doing. I ignored her inquiry, proceeded to open the trunk and threw in this awesome, FREE chair. It's exactly what I wanted for the porch!

{round 2} the alley suitcase. Down the alley I went one morning on my way to work when I found myself in a familiar situation opening the trunk of my car. You see it's a love-hate relationship with the alley behind our home. I love that I found this awesome suitcase otherwise destined for the landfill. But I hate when people dump couches, mattresses, la-z-boys, etc. expecting others to take care of their waste. Well anyway, there are so many things I can do with this suitcase. And it was FREE so who cares if it gets a little weather worn!

{round 3} the diy yarn wreath. Pretty much the easiest fool-proof craft out there. Took me longer to decide how to do the ruffle adornment than it did to wrap the yarn around the straw form. Inspiration found here. Tutorial here. The yarn is from Michaels and the gray felt for the ruffle is from a thrift store SCORE!

{round 4} the flower clothespin. Left over from my nephews baby shower, I use this clothespin to attach out going mail to the mailbox. Funny thing (or not) this is the second one I've put out...someone stole the first one (mail person?).

Well happy 4th to everyone! All the sudden its summer in San Diego and my white legs are making their yearly appearance. By the end of the summer I will finally see some color on them, but its a long process I dread every year.

We've been rather busy at the roundy household with gardening projects, decorating, starting more crafts than I can finish, out of town company and special events at work. All of those have a story and I plan to blog about them the coming week. But for now I was able to finish one project; the 4th of July firecracker cans. Aren't they cute?

Simple directions:
1. Wash your cans
2. With the use of hot glue wrap the can with your choice of paper. I added the ribbon trim to disguise my uneven cutting job. side note: I experimented with a rotary cutter and that darn thing was sharp, lets just say a couple of the lines went off track!
3. Hot glue your desired ribbon inside the open end of the can.
3. Hammer 2 holes in the top of the can to thread string through.

Look at all this work I did pre-pinterest! I was cleaning out the files on my computer and found all of these wedding inspiration boards I used as a guide for decisions. Funny thing is it took me hours to search for all of this inspiration. Brides really do have an advantage now with the ever growing pinterest at their disposal.

wine cork board

What can I say, we like wine!

This is actually my second attempt at this wine cork board. For the first round I used white foam core for the backing and didn't really plan out the placement of my corks... major fail! For the second round I used black foam core for the backing and tested the placement of the corks before glueing.

Ok so super simple directions:

1. Cut your selected corks in half (I'm not going to lie, this part is labor intensive!)

2. Hot glue foam core backing to your selected frame.

3. Lay corks in your desired pattern starting from the center outward.

4. Hot glue halved corks to the foam core backing.

One other suggestion: Use 3M Command Strips to hang the frame, otherwise every time you push/remove thumb tacks the frame will move. Eventually annoying you enough to stop using the cork board for its intended purpose.

And my absolute favorite detail of the wedding {besides the hanging mason jars} were the centerpieces! Oh how I just love the eclectic feel she created. This diy project consisted of stained frames from ikea, fat quarters in various patterns, antique mason jars and a delightful arrangement by Bethany from splendid sentiments.

From the bride... I'm not sure exactly what to say about the wedding except that I really am thrilled with how it came out! There were times during the "crafting" process when I thought I should have made it a simple destination wedding or done something more all-inclusive. But once the actual day came I was calm and relaxed for most of it and honestly enjoyed it so much. All of my vendors really went out of their way to understand my vision and the pride they all have in their work really showed. I had a great day and I love all the photos. It made me happy and proud to see and hear how special it was for Jeff too. Even though it took endless hours of stalking wedding blogs and doing research, I'm glad I got so involved in the planning and couldn't be happier with the result! I'm so glad my sister is getting married next year so I don't have to go through planning-withdrawls for too long!

And I don't even own Adobe Photoshop! I actually used the Pages program on my trusty Mac computer. For these beauties I used Avery Postcard templates with recipient address labels on the back. I ran a little short on time {due to the move} so I didn't print the recipient addresses directly onto the postcard, instead I used these.

p.s. postcard stamps are really cute at the post office right now!

CST care packages

I can't help it, I love giving gifts! So... it's California Standards Tests (CST) next week for our students at the teen center. I have a small group of high school leaders that meet with me weekly and I felt they may need a lil somethin' somethin' to inspire them to give a crap during testing. They are called the Ambassadors and I made them these cute care packages.

I sent my adorable little sister this easter basket {in a jar}. She's totally an adult but I still love to spoil her like a little girl!

This was a very simple project. Using a pint sized mason jar; fill it with crinkle cut shred, jelly beans and 2 travel size items from Bath & Body Works. On the top I made a fabric flower out of an old t-shirt and added a safety pin to the back so she could use it again. I also used this really cool adhesive ribbon tape from Martha Stewart.

I used this adorable picture of mr. roundy...

to make the party hats you see here.

This party essential was so easy to make I don't think I will ever buy these at the store again! On a 8½ x 11 piece of card stock I printed the above picture of mr. roundy. I then printed a template for the hat shape, downloaded from Martha Stewart, also on card stock. I cut out the template and traced the shape onto the desired part of the picture. Cut out the shape and use a blade to cut the slots as identified on the template. After assembly be sure to tape the slotted closure.

The directions suggest using 8 inches of elastic cord for the hat. I measured my own head to estimate the desired size for adult {you will need to adjust the size if the hat is for children}. I followed the instructions and attached the elastic cord with tape. Unfortunately that technique didn't last the whole night. My suggestion would be to hot glue the elastic cord to guarantee it will stay put.

carrot cake {cupcakes}

These cupcakes (and the party hats) were a huge hit at mr. roundy's recent birthday party.

I found the recipe over at sugar and charm. I swear I am such a sucker if someone says "this is the best _____ you will ever have". In this case she was right! I typically dislike carrot cake but fully enjoyed this recipe.

And yes I know, they are way cuter than mine. I have a long way to go with my cupcakes. As you can tell I put too much batter in the cup and I can't seem to get that frosting technique down. Oh well they still tasted great!

sugar and charm

{carrot cake cupcakes}

ingredients

2 cups flour

2 cups granulated sugar

2 teaspoons baking soda

2 teaspoons ground cinnamon

1 cup corn oil

3 eggs, lightly beaten

2 teaspoons vanilla extract

1 ⅓ cup pureed carrots

1 cup shredded coconut

¾ cup canned crushed pineapple, drained

steps

1. Preheat oven to 350˚

2. Puree 1 ⅓ cup carrots (first chop, then boil, then puree) and set aside.

3. Sift together the flour, sugar, baking soda, and cinnamon in a large bowl.

4. Add in the oil, eggs, vanilla and beat well.

5. Fold in the pureed carrots, shredded coconut and drained pineapple.

6. Pour batter into either a cake pan or cupcake pan.

7. Bake until the edges have pulled away or until a toothpick comes out semi-clean. I baked the

cupcakes for about 16 minutes... every oven is different so keep an eye on them.

8. Cool for awhile, then frost.

{cream cheese frosting}

ingredients

1 8oz package cream cheese

1 stick butter

½ teaspoon vanilla

2 cups confectioners sugar

steps

1. Beat cream cheese, butter and vanilla together until smooth.

2. Add in the sugar and beat until combined.

Note: I made 12 full sized cupcakes and used the rest of the batter to make mini cupcakes. The minis were a huge hit and I totally recommend that option when baking cupcakes. Plus they're so cute!

This is Bouddhanath Stupa in Kathmandu, Nepal. The mr. and I visited this buddhist stupa on our honeymoon.

This is the cake I had made for the mr.'s birthday.

I mean how cool is that cake?! Thank you Cecelia (to the right of mr. roundy) for such amazing work and agreeing to my crazy concept. In case you were wondering it tastes delicious.

While camping in a village in Nepal we were fortunate to meet the local children. The girls were very friendly and came up to me and another female camper. They were very interested in 1. any books we had with pictures 2. our cameras and the pictures on them 3. they loved to pose for pictures and perform for us. Funny thing was as soon as a male would approach our circle they would dash.

I discovered this really cool app that helped me create the look-a-like polaroid photos you see below.

It's cleverly called the poladroid, and the best part is its free!

We started by scanning our childhood photos, used the poladroid image making program, printed the result on cardstock paper, cut them to size and hung them on the string for a nice decorative touch to the window.

The walk from the parking lot to our ceremony & reception location was rather long so I knew I needed directional signs. I absolutely fell in love with the font on the sign below and used it as the main inspiration for our signs.

I salvaged some wood that was destined for the land fill, had the mr. cut it down to size, stained it and used white acrylic paint for the words. All in all I feel I created a pretty accurate replica of the inspiration.

I was concerned the ground would be too hard to hammer the stake into so I opted for the galvanized french pails (with bricks in the bottom) topped with approximately 7 apples. Why apples? Because they were on sale and the budget was tight!

Lots of excitement around the roundy household this weekend! We kicked it off with the news our wedding was published on Style Me Pretty. I was literally screaming with excitement. As my sister said, its very full circle for me. I once browsed the pages of SMP for wedding inspiration and now other brides are being inspired by our wedding. And that is the truth! I had over 900 hits on this here blog in the first hour and several emails to follow. Pinch me!!

Also over the weekend I attended the bridal shower of a former college roommate. We haven't seen each other in 8 years! She found me on our photographers website as she was searching for wedding inspiration for her upcoming wedding at a venue I know very well... Leo Carrillo Ranch. Long story short I will be lending a hand at her wedding this April and look forward to sharing photos of her sure to be beautiful wedding.

Oh and the mr. and I have decided to rent a bigger house. And my wonderful husband has agreed to let me use the "spare" bedroom for crafting! Happy happy joy joy... I can already envision my sewing machine on that refurbished desk we used as our guestbook table.

I held onto this inspiration photo for a long time in the hopes that I would be able to implement either the lace on the back of the chairs or the crystals hanging from the umbrella.

Well on a lucky thrift store shopping day I scored a HUGE bag of lace for $6. I used that lace plus some ribbon bought at the dollar tree to dress the back of the ceremony chairs.

As for the fabric flowers strewn down the aisle... honestly I have no idea how that all came about. I remember I was having a hard time grasping the price tag of real rose petals and I just couldn't see silk petals working with our theme. So as I discussed in this post I just started sewing up fabric flowers and I couldn't be happier with the results.

And last but not least the reserved seating signs! Here they are in all their glory...

inspiration to reality: wine barrel table

I so desperately wanted to have our wedding reception in the barrel room of a winery but couldn't find one large enough to host our number of guests. My wine barrel obsession led me to these inspiration photos and the birth of our gift table concept.

We scored the 2 wine barrels from craigslist for $70. As mentioned here, mr. roundy brought them back to life with a little sanding and some stain. We salvaged 2 planks of wood, cut them to our desired length and stained them as well. I used a vintage lace table cloth borrowed from my mom and voila the wine barrel gift table...

Inspired by the photo below I also used a steamer trunk for the card box.

I created our first name initials with block letters and some scrapbook paper that matched our color palate.

inspiration to reality: ceremony programs

The ceremony programs for our wedding were inspired by this amazing paper artist at Paper and Thread. We were unsure what the weather would be like at our October wedding in Southern California, typically we experience heat waves around that time, so in preparation for that occurrence we felt a fan style program would be the perfect solution.

As with all of the diy paper products for the wedding, the ceremony programs were a labor of love. The mr. spent hours designing and perfecting the content of the pages. My mother helped with all of the hand punches (circle in the middle of the cover and decorative corners). And I'm pretty sure there were several other helpers for the assembly however they were put together so close to the wedding date and I don't remember much from that time.

fabric heart garland

Oh {wo}man this was a difficult project! I'm really happy with the way it turned out however it was a beast to complete. As always I started with an inspiration photo...

Cute right? I was determined to use all upcycled fabric for the garland, so I set off to clean out my closets and craft supplies. I even asked a friend for any of her daughters clothes she was planning to donate because I knew they would have cute patterns. And in a last ditch effort not to buy new fabric, I stopped by a couple of thrift stores. Here's a pic of my fabric collection for the project.

With the inspiration photo in hand I estimated the size of the muslin square (2.5"x 2.5"). I also noticed some squares held two hearts so I doubled the length for those. After that I created a heart shaped template with cardstock paper, traced the template onto my fabric and cut out my hearts.

In the first assembly attempt I thought I could cut corners by sewing straight down the middle of the heart or vertically down the square.

The single stitch plan didn't work very well; it was just too clumsy. So I decided to sew all of the muslin squares on first as you see below and then go back to sew the hearts on.

In the end there are 2 stitches on each square, one vertical and one horizontal.

And here's the final product! It took about 6 hours to complete this one strand and I hope to finish another to hang above this one.

Lessons learned:

Muslin is not the best option for the base square. The weave of the fabric is too loose and the stringies were driving me nuts!
Quilting fabric worked best for the hearts. The fabric from the upcyled cotton t-shirts wasn't stiff enough and those hearts tend to flop over.
Use a much thicker string than I did. The crochet yarn I used kept twisting after the garland was assembled and it was a real pain.

The mr. and I have shared this box of See's Candies since 2005. Say what?

Each year we swap filling the same heart shaped box with a custom assortment of candies. This tradition was suggested to us by my Aunt Char who, when shopping for her own See's candies, witnessed an elderly lady filling a heart shaped box she had shared with her husband for years.

I'm an Auntie {again}!! And let me say the baby shower was perfectly themed because this little guy is absolutely cute as a button! Baby Kai tricked his mommy into thinking he was ready to come out at 6am. But after a long day of playing in the park and eating buffalo wings he decided to join his family at 9:14pm.

Much to everyone's relief, Malakai's daddy made it back from military training just in time for the birth. And big sister Malia fell in love with her baby brother immediately. In fact she burst into tears when another visitor tried to hold him.

Here we have the proud Uncle daydreaming of football games and future hikes with his little nephew...

I met a fellow blogger {crafty welder chick} at a birthday party last weekend. She delighted everyone with these yummy cupcakes and I felt it was essential to share. I haven't made these yet, but I've tasted them and they are GOOD! I think I will make some for the mr. on valentines day.

{cheesecake cookie cups}

ingredients

12 pieces chocolate chip cookie dough

1 8-ounce package cream cheese

1/2 cup sweetened condensed milk

1 large egg

1 teaspoon vanilla extract

1 21-ounce can cherry pie filling

steps

1. Preheat oven to 325 ˚. Line 12 muffin cups.

2. Place one piece of cookie dough in each muffin cup.

3. Bake for 10 to 12 minutes or until cookie has spread to edge of cup.

4. Beat cream cheese, sweetened condensed milk, egg and vanilla extract in medium bowl until smooth. Pour about 3 tablespoons cream cheese mixture over each cookie in cup.

5. Bake for additional 15 to 18 minutes or until set. Cool completely in pan on wire rack. Top with filling. Refrigerate for 1 hour.

note

{crafty welder chick} made several variations of the recipe. Don't limit your self to the chocolate chip cookie, try peanut butter or maybe sugar cookies with a complimentary topping!

valentines rag wreath

This wreath represents a personal victory; I bought just enough fabric to get the job done! I cannot tell you how many times I've bought too much fabric or had to return for more. So if you've been in either situation you must know how satisfied I am right now.

The process...

Google search {rag wreaths} and you will see there are many inspirations, methods and tutorials out there. I particularly enjoyed the tutorial on this blog because she used the same box wire wreath frame I used for the diaper wreath. If its not obvious by now I jump on any opportunity to repurpose an item!

I started with 3/8 yard of each fabric. There were 4 fabrics in this wreath: 2 polka dot, 1 stripped and 1 solid. I simply cut my fabric into 1.5" wide x 7" long strips. These dimension were decided by trial and error. Experiment with your dimensions to meet the size and desired fullness of your wreath.

After cutting the strips I simply tied them around the box wire wreath frame. No knot or double wrapping around the wire required. Here you can see the back of the wreath.

As simple as that!

white sangria

I thought you all might like to have the recipe I used for the white sangria at the baby shower. I have a feeling this could be a real hit at summer parties. It's also easily doubled to fill up those larger sized containers. And as the case is with any sangria, the longer it sits the better it is.

{peachy white sangria}

ingredients

1 bottle white wine {I used pinot grigio}

1/2 cup peach Schnapps

1/4 cup sugar

2 sliced peaches {I used one bag of frozen}

1 sliced orange

1/2 mango peeled and sliced

1/2 liter ginger ale

steps

1. Pour wine and Schnapps in the pitcher and add peach, orange and mango.

2. Add sugar and still gently.

3. Chill mixture for at least one hour.

4. Add ginger ale just before serving.

At the time I made these cupcakes it was late to bed and early to rise for a whole week. I'm surprised they even turned out, they were quite the chore. But when my husband came home and said they were really cute all the hard work paid off. Here's the inspiration...

Although the Paula Dean recipe for red velvet cupcakes as you see above sounds delicious, the mommy we threw the baby shower for loves funfetti cupcakes so I opted for them. I used leftover mason jars from my wedding {more on that later}. And I was too frugal to buy bakers twine so I found a similar yarn option at Michaels. And this is what I came up with...

The process...

Using a circle Marvy clever lever mega craft punch {2.5"} I punched out the message I printed on card stock paper. In this case my message simply said {thank you}.

The next step was to add the message card to the lid of the jar. I decided to hot glue the pieces together, so when the recipient opened their jar the lid would be one piece. I don't know it seemed like a good idea at the time...maybe it was an unnecessary extra step?

Next up is placing your cupcake in the jar. For my test run I followed the directions on my cakies blog. Unfortunately during the taste test phase I found the funfetti cake and vanilla frosting were just too sweet to layer. So I decided to place one cupcake in the jar with an appropriate amount of frosting on top. Be sure to fill the cupcake pan no more that 2/3 full, any bigger and you will have a hard time pushing them through the opening of the jar. With that said, use a smaller jar! I was determined to recycle the jars from my wedding but there is no need to use the pint size for this project.

After the cupcake was in the jar, I used my Ateco reusable pastry bag without a decorating tip {just the coupling} to apply the frosting. This was relatively easy. I finished off the cupcakes with blue sugar sprinkles.

The final step was to add a spoon and attach a bow using the bakers twine look-a-like yarn. Again the frugalista in me didn't want to spend the money on the disposable bamboo spoons so I opted for a compostable corn spoon {don't worry, I didn't order a thousand of them}.

One more item checked off the bucket list; throw a baby shower! I was very happy with the way everything turned out and most importantly my sister-in-law {the mother} loved everything. I enjoyed experimenting with some new-to-me crafts for this shower, I will highlight some of them in future blog posts. How many of you love Anthropologie's window displays as much as me? Well last spring I was obsessed with their recycled plastic bottle flowers as seen below.

Cool right? Well I was determined to do this craft at the teen center I manage. {Here's the back story- we were fortunate enough last spring to receive grant funding from a local utility for education on energy conservation. With the funding we developed a living room style classroom focused mainly on energy conservation but also other sustainability methods; we named the program "Energy Saving Adventures"}.

So… the teen center throws away about this many corn cups on a weekly basis. Better than throwing away the plastic ones right?

Well I knew we could do better and at one point it just hit me. The main draw in our "Energy Saving Adventures" logo was a tree. Why not create a tree at the entry to the classroom as a visual draw to what we are doing inside.

So I took this cup...

…and made these flowers.

The students at the center helped of course. We cut down the sides of the cup, bent the strips back and took them outside to spray paint. The cups are attaced to the wall with a very small nail.

Well I finished up the baby shower (or should I say sprinkle) invites. Pretty darn cute if I do say so myself. I opted for the easy route this time and purchased semi DIY invites from Target. I used two different fonts from the kevin & amanda blog. Attached the provided ribbon. And made some cute paper buttons for that extra touch.

The mr. and I were very thankful for the invitation to share thanksgiving with friends, so we made this hostess gift.

I used my embossing gun to make the "thanks" tag. I love embossing!

And that is my first cheese ball (thank you Cece)! Here's the recipe in case you want to give it a try.

{olive cheese ball}

ingredients

8 oz. cream cheese

4 to 5 ounces crumbled blue cheese

1/2 stick of butter (I may omit this next time)

can chopped black olives

2 tablespoons chopped chives

1/4 cup chopped walnut

crackers

steps

1. Take cream cheese, blue cheese and butter out of the refrigerator and let stand at room temperature for awhile.

2. Cream the first three ingredients in a bowl until they are mixed well (I used my kitchen aid mixer). Add the well drained chopped olives and chives and mix well.

3. Put the bowl in the refrigerator and chill for an hour or until firm.

4. Place chopped nuts on a plate. Form a ball with the chilled cheese using a spatula or your hand.

5. Roll the ball in the chopped nuts and place the ball back in the refrigerator to chill for a few more hours.

6. Serve with crackers.

The following day we skipped black friday shopping and hit the trail. This particular trip was rather cold so we were able to test out some gear for Nepal (12 days!).

I can't believe they turned out! Here are the button flowers I made for my little nephew's "cute as a button" baby shower.

I would still like to add the leaves to my bouquet as seen in the inspiration photo. I also plan to stick the stems in floral foam to ensure they stay in place. Here is a close up view of a stem.

A helpful tutorial can be found on the whimsy love blog. A few notes: I opted to use 18 gauge wire from the jewelry section at michaels. The wire was rather pricey {even with a coupon} so I didn't twist all the way down the stem. Don't limit yourselves to shopping at an overpriced craft store, I scored some green floral wire last night at the dollar tree!

Next time you are at your local trader joes {if you are so lucky to have one} pick up the peppermint hot chocolate. They improved the recipe to include mint chocolate shavings and they are amazing!

I made ours extra special with the use of my handy cuisinart smart stick hand blender and some heavy whipping cream. Pretty sure the mr. had no idea that was how whipped cream was made. If you choose to make homemade whipped cream, skip the sugar, I think you will find the cocoa mix is sweet enough.

This may just become my go-to-gift for the holidays. Maybe coupled with some cute mugs and homemade marshmallows?!

{creamy chicken enchiladas}

ingredients

1 tablespoon butter or margarine

1 can Rotel tomatoes and green chilies, drained

1 8 oz package cream cheese, cut up and soften

2 cups chopped, cooked chicken breasts

8 8inch flour tortillas

2 cups shredded monterey jack cheese

1 pint whipping cream (yikes!)

steps

1. Preheat oven to 350˚

2. Spray 9x13 baking dish with Pam. Melt butter in large skillet over medium heat. Add rotel and saute 1 minute.

3. Stir in cream cheese and chicken and cook, stirring constantly until cream cheese melts.

4. Spoon 2-3 tablespoons of chicken mixture down center of each tortilla.

5. Roll up tortillas and place seam side down in a lightly greased 9x13 baking dish.

6. Sprinkle with monterey jack cheese, and drizzle with whipping cream.

7. Cover with foil and bake at 350 degrees for 30 minutes.

8. Take off foil and cook for another 15 minutes or until top is golden brown.

mr. roundy made this the other night and I absolutely loved it! We did substitute the red currant jelly for an apricot jelly we had on hand. I felt the swap worked well and don't know if we will even try it with red currant. Let me know if you try it.… and enjoy!

{sweet and spicy chicken with soba noodles}

ingredients

6 ounces soba noodles

4 heads baby bok choy, sliced crosswise into strips

1 small red bell pepper, thinly sliced

2 tablespoons canola oil

2 tablespoons rice vinegar

1/2 to 1 teaspoon Sriracha or other Asian chili sauce

kosher salt

1/2 cup red currant jelly

2 tablespoons ketchup

1 tablespoon ketchup

1 tablespoon grated fresh ginger {don't skip this ingredient, its amazing}

4 6-ounce boneless skinless chicken breasts

steps

1. Cook the noodles according to the package directions, adding the bok choy during the last minute of cooking. Drain and run under cold water to cool.

2. Transfer the noodles and bok choy to a large bowl. Add the bell pepper, oil, vinegar, Sriracha, 1/4 teaspoon salt and toss to combine.

3. Meanwhile, heat broiler. In a small bowl, combine the jelly, ketchup and ginger.

4. Place the chicken on a broiler proof baking sheet lined with foil. Season with 1/4 teaspoon salt.

5. Broil the chicken until cooked through, 4 to 5 minutes per side, brushing with the jelly mixture twice during the last 3 minutes. Serve with noodles.

It pays to know people who honeymoon in Alaska! mr. roundy and I were very flattered to cook up our friends Alaskan salmon caught on their recent honeymoon. We used a Sam the Cooking Guy recipe, paired it with some delicious Julian Hard Cider and finished up with pumpkin carving. Thank you mr. and mrs. Wagner.

{black bean salmon}

serves 4 - 6

As Sam the Cooking Guy says, "Only three ingredients, but it tastes like fifty." The black bean & garlic sauce is available in the Asian aisle at any supermarket. Look for Lee Kum Kee brand.

Ingredients

1 cup apricot preserve

1/4 cup black bean & garlic sauce

1 whole salmon filet, about 1.5 pounds

3 green onions, finely chopped

Sesame seeds

Steps

Mix apricot and black bean sauce in a small bowl and stir well

Spoon over top of salmon to cover

Broil approximately 7 minutes for each inch of thickness

Remove to a serving platter and sprinkle with sesame seeds and green onions

{Heart Attack in a Pot}

a dinner recipe

ingredients
30 corn tortillas
16oz sour cream
2 cans diced green chillies
2 cans corn
2 pounds shredded cheese
2 cans cream of mushroom soup
2 cans chicken

steps
1. Combine soup, sour cream, chicken, green chillies and corn in a bowl.
2. Grease the Dutch oven and lid with oil -or- line the Dutch oven with foil for an easy clean-up.
3. Layer the bottom of the oven with tortillas, sauce {step 1} and cheese. Continue layering.
4. Sprinkle the remainder of the cheese on the surface.
5. Cook for 45 minutes or until brown and bubbly.

note: For less of a heart attack opt for low fat cheese and sour cream.

{Monkey Balls}

a breakfast recipe

ingredients
2 cups chopped walnuts or pecans
1 cup butter
2 cups brown sugar
4 cans flaky canned biscuits

steps
1. Grease Dutch oven and lid -or- line the Dutch oven with foil for and easy clean-up.
2. Cut the biscuits into fourths and ball up.
3. Melt butter, add nuts and brown sugar together.
4. Place half the balls of dough in the bottom of the Dutch oven and drizzle half the sugar mixture on top.
5. Place the remaining balls of dough as the second layer and top with remaining sugar mixture.
6. Bake for 20-30 minutes or until the dough is thoroughly cooked.
7. Pull apart and enjoy!

note: I reduce the butter and sugar by quite a bit and still enjoy the same great taste. I do however enjoy the traditional biscuits over the low fat.

It's moments like these at work that fill my love cup for a long time. An impromptu jam in our music room is always a good time. The young man singing lost his father a week ago in a tragic accident. He really needed this to 1. escape the pain 2. just let it out! I know you'all don't know these youth. But they come from a rough place where adversity hammers down on them everyday. Our teen center is an escape from a reality many of us will never know.

The big plan is to have these down the ceremony aisle simulating rose petals. I used this tutorial to teach myself how to make these lovely fabric flowers. Just a note if you plan to make some yourself muslin fabric is the easiest to work with.
